Serves: 8
1 Use a pastry cutter to cut 8 circles from the pastry sheets. Use these circles to line 8 holes of a standard muffin tin, taking care to press the pastry into the corners of the tins. Lightly prick the pastry cases with a fork. Place in the fridge to chill for 30 minutes.
2 Heat oven to 200°C. Place 2 Mainland Cheese Cubes into the centre of each pastry case. Scatter with chopped bacon. Break eggs into a bowl, add parsley, milk, salt and pepper and lightly break up eggs with a fork.
3 Pour egg mixture into pastry cases to fill. Place remaining circles of pastry on top and crimp edges to secure. Brush tops of pies with egg glaze.
4 Bake pies for 20 to 30 minutes until the pastry is puffed and golden brown and the filling is set.
