This is our play on a classic Poutine dish, but with an Italian twist. Crispy fries are loaded up with a bacon-laced carbonara sauce, then topped with Mainland Parmesan, which is grilled until bubbling and delicious.

Ingredients

  • 750g bag French fries 
  • 485g jar carbonara sauce 
  • 250g streaky bacon 
  • 200g packet Mainland Grated Parmesan 
  • Finely chopped curly parsley for garnish

 

Method

  1. Preheat your oven and cook the French fries according to the packet instructions.
  2. Once cooked, remove from the oven  and tip into a 23cm square ovenproof dish. Turn your oven onto grill. 
  3. Chop the bacon into pieces and cook in a pan until golden and crispy. Pour over the carbonara sauce and bring to a gentle simmer.
  4. Add a large handful of the Mainland Grated Parmesan (roughly 50g) and mix through until well combined.
  5. Pour the carbonara mixture over the fries as soon as they come out of the oven and scatter over 100g of Mainland Grated Parmesan. 
  6. Place under the grill until golden and bubbling, then remove and serve immediately.
