Cob loaves are a classic and this slightly elevated recipe adds lemon and chives for a bold and delicious flavour.

Mainland Mozzarella and Colby are melty and gooey, perfect for dipping the crusty bread.

Method

  1. In a large bowl, add the cream cheese and sour cream and mix to combine.
  2. Preheat a fry pan with a drizzle of olive oil. Wilt the spinach for 1 - 2 minutes over a medium heat. Once wilted, remove from the pan, roughly chop then add to the cream cheese.
  3. Finally, add the Mainland grated colby and mozzarella, lemon zest and juice, chives and season. Mix well and set aside.
  4. Use a knife to cut out the middle of the loaf of bread. Cut the middle into smaller pieces. Place the loaf and middle pieces on a baking tray. Drizzle with oil. Pour the cream cheese mix into the hollowed loaf, top with more grated cheese and bake at 180°C for 10 - 15 minutes until golden and bubbling.
  5. Remove from the oven and top with more chives and a drizzle with oil before serving.
